BELLE - By 9:00 a.m. on Nov. 17, Walker Machinery Co. cooks Hope Dunn and Vicki Smith were adding marshmallows to the top of their homemade sweet potato casserole – two industrial-sized pans full.
But they had been hard at it hours before. Both had been cooking throughout the night, laboring over turkeys, ham, potatoes and stuffing. The kitchen was redolent with holiday cheer. For starters they baked 20 – that’s right - 20 turkeys, painstakingly sprinkled with salt, pepper and seasoning. Twenty-five loaves of bread were torn up into five pans of homemade stuffing layered with chicken broth, onions, celery and butter. A ham glistened with Dunn’s exclusive glaze recipe of brown sugar, ketchup, mustard, and Pepsi. Ten pounds of macaroni salad and deviled eggs rounded out the meal. Suzy Bird made about 400 deviled eggs, with the expert peeling skills of Robin Branham and Michele Hartleben by her side.
“I just whizzed up the filling in a food processer, put it in a baggie and cut the tip off to fill them, Bird said. “It didn’t take too long.”
This is Dunn’s seventh year cooking Thanksgiving lunch for Walker. Neither Smith nor Dunn cook on Thanksgiving; they need a day off, they said. And after today, it seems a nap is in order. “As soon as I get home I’ll take a shower, put on a nightgown and head for the bed,” Dunn said.
